jeff does not like mushrooms. his other fine qualities make up for this character flaw, so i forgive him. however, i have just discovered that *both* of my planned dinners for tonight are designed to be made with mushrooms. the stroganoff can be made without. it is sad, but true. however, i haven't made beef bourguignon before and at least one recipe calls for 12 oz. that's a whole lot of mass to ignore. what is the best substitute for mushrooms in terms of mass, texture and that 'magic something' that is added to the dish?

i don't know if you can replace that magic something, but you can use tvp or extra firm tofu to replace the mass. tvp usually comes in beef or chicken flavors and is frequently dry and needs to be rehydrated first.

disclaimer: i can't cook for shit.

yah, tofu was one of my ideas along with cauliflower, but they are both sauce absorbing rather than sauce producing.

i can't cook either, and for the most part i'm working during dinner cooking time. however, when i'm not working the family expects food to appear. it's rather rude :p.

onions. celery in the blender. carrots

toad has allergic reactions to most every mushroom and i do to Some of them, tho it's mostly the mold or some chemical put on them that doesn't grow away.

making chicken nuggets doesn't count as cooking (fewer than three steps required). baking, for some odd reason, does not count as cooking either.
